SALTED CARAMEL


INGREDIENTS:

1 cup ( 2 dl ) heavy cream
1/2 tsp salt
1 1/4 cup ( 250 g ) regular sugar
1 stick ( 115 g ) butter
1/4 cup ( 1/2 dl ) water


Put sugar and water in a saucepan and heat slowly on medium heat until it's all melted and has a beautiful amber color. Pour in the cream, but be careful when adding the cream to the pan as the mixture will bubble up. Add the salt. Mix carefully until well incorporated. Take the saucepan of the heat and add the butter in three additions mixing well between each. Store in an airtight container.
