INGREDIENTS:

4 tbsp black tea
1 1/2 cup ( 3 dl ) boiling water
25 cardamom pods
22 cloves
20 star anise
20 black peppercorns
3 cinnamon sticks
1,2 inch ( 3 cm ) fresh ginger
1 1/4 cup ( 2 1/2 dl ) cane sugar
2 tbsp brown sugar
1 spsk glucose syrup
1 1/4 cup ( 2 1/2 dl ) milk


Bring your water to a boil and pour it over det black tea. Let it sit for 5 minutes. Mix all of the spices and roast them on low heat for a couple of minutes. Be careful that it doesn't burn. Sieve the black tea through a fine mesh strainer and pour the tea water into the saucepan with the roasted spices. Let it simmer for 5 - 7 minutes. Pour the mixture through a fine mesh strainer again, and throw away the spices. Now pour your chai water back into saucepan and mix in the sugar glucose syrup on high heat. When it's almost boiling, turn the heat down to medium and let it simmer for about 10 minutes and until the sugar is dissolved. When it's done (a bit more thick) just pour it into a jar and keep in the refrigerator. When you want a cup of chai latte, just use a couple of tbsp and pour warm milk over. I like to use about 5 tbsp of chai and 1 1/4 cup of milk, but just use as much or little as you feel like. I use a milk frother from Nespresso.
