INGREDIENTS:

1/3 cup ( 75 g ) butter, at room temperature
1/2 cup ( 90 g ) cane sugar
1/4 cup and one tbsp ( 70 g ) dark brown sugar
1 egg
1 2/3 cup ( 210 g ) All-purpose flour
1/2 vanilla pod
1 tsp baking powder
3 - 4 tbsp salted caramel.


Heat oven to 180°C / 356°F. Scrape the seeds from the vanilla pod and mix it with a tsp of the cane sugar. Beat cane sugar, vanilla seeds and butter in a mixing bowl until fluffy. Add dark brown sugar and the egg and beat until smooth. Mix flour and baking powder and add it to the mixture. Roll evenly sized balls, you will need to balls for one cookie. Press them gently to flatten them a bit and put about 1/2 tsp of cold salted caramel on half of them and put the other half on top. Pinch together the sides and put on a piece of baking paper. Don't forget to leave some space between cookies as they float out. Bake for 8 - 10 minutes. Let them cool of a bit.
