CHOCOLATE SALTED CARAMEL PAVLOVA WITH BLUEBERRIES

INGREDIENTS:

4 egg Whites
2 cups and 4 tbsp ( 225 g ) regular sugar
3,5 oz ( 100 g ) dark chocolate
1 cup ( 2 dl ) heavy cream
Salted caramel
Fresh blueberries


Preheat oven to 100°C / 220°F Put the egg whites and sugar in a bowl. Place the bowl over a saucepan of simmering water. Whisk by hand until all of the sugar has dissolved. Transfer the mixture to another bowl and beat with an electric mixer on low speed for 2 minutes. Increase the speed and beat until you have a meringue that forms stiff peaks.
Melt your dark chocolate and drizzle it into the meringue. Carefully fold the chocolate into the meringue. Only fold a few times to create streaks of chocolate. Place on a lined baking tray and spread it out a little. Bake for 1 1/2 hour. When it's done, set aside and let it cool completely on a wire rack. When ready to serve, whip the cream until soft peaks form. Drizzle salted caramel on the meringue, spoon the whipped cream on top and drizzle more caramel on. Put lots and lots of fresh blueberries on top and serve. Also, have som ekstra blueberries nearby, you really can't get enough blueberries with this pavlova! You can eat it with ice cream, or just by it self. So good!
