INGREDIENTS:

8 cups ( 4 dl ) of milk
4 cups ( 2 dl ) of heavy cream
2 egg yolks
3/4 cup ( 170 g sugar )
6 vanilla pods


Split your vanilla pods and scrape the seeds out. In a big saucepan combine milk, heavy cream, vanilla seeds, the empty pods and half of the sugar. Let it heat up on low to medium heat. In a bowl beat the rest of the sugar and the egg yolks until light and fluffy. When the milk mixture is almost boiling take it off the heat and very very slowly begin to mix it in with the beaten egg yolks. It's important to do this slowly and with a small amount of hot milk at a time, otherwise you can cook your egg yolks and we don't want that. A little bit of hot milk, then whisk it together then and a bit more whisk together and so on until all of the milk mixture is fully combined with the egg yolk mixture. Now you can pour it back into the saucepan on low to medium heat. Stir the mixture until it thickens a bit. When it can coat the back of the soon it's ready. Put a fine mesh strainer over a bowl and pour the mixture through. Put some plastic wrap over the bowl, all the way down onto the hot mixture and put in the fridge until completely cold. Now you can pour it into your ice cream machine.
