INGREDIENTS:

2 cups ( 4 dl ) rhubarb
1 cup ( 2 dl ) water
1 cup ( 2 dl ) sugar
1 tsp vanilla paste or half a vanilla pod


I love syrups! First of all it's fun to make. And you can use them for so many different things. On yoghurt, in drinks, on pancakes and on meringue just to name a few. This one is delicious and beautiful with the pink color and the small black vanilla dots. Remember to use a good vanilla paste that actually have real vanilla in it. The taste is way better and way more beautiful with all the vanilla dots.

Cut your rhubarb into 0,5 inch pieces. Put the rhubarb and water into a saucepan and bring to a boil. Let it simmer until the rhubarb is soft. Strain the rhubarb and clean the saucepan. Pour the rhubarb juice back into the clean saucepan and add the sugar and vanilla paste. (if you use a vanilla pod, scrape the vanilla beans from the pod and mix it with 1 tbsp sugar and put the vanilla sugar and pod into the saucepan with the rhubarb. When it's done remove the pod.) Let it simmer for 10 - 15 minuts until all of the sugar has dissolved and it has thickened. You can test the consistency by taking a couple of drops on a spoon and let it sit for a minute or so. It should be sticky and have thickened. If it's still to thin let it simmer a bit longer and test again. When it's done pour it into an airtight container and keep it in the fridge.
