INGREDIENTS:
4 egg yolks
10 dl buttermilk
6 soured milk
1 vanilla pod
Lemon juice
6 tbsp sugar

VANILLA BISCUITS:
130 g flour
50 g almonds
1 egg
1 tsp vailla paste ( or 1/2 vanilla pod )
60 g butter
1,5 baking powder

Remember to save the empty vanilla pod! You can use it for something else later.


Add the almonds and 50 g sugar to a blender and blend until very fine. Add it to a bowl with flour and baking powder. If you use vanilla paste you can add it now. If you use a vanilla pod scrape the beans from and mix them with a tsp of sugar. Then add it. Now you can add the butter and the egg. Mix until everything is combined. If the dough is a little dry just add a bit of water. Divide the dough into small balls, put them on a baking tray with baking paper and lightly press them a bit flat. Don't forget to leave some space between the biscuits as they float out a bit. Bake them i about 20 minutes at 150°C/300°F. Set aside to cool off.

Scrape the vanilla beans from the pod and mix it with 1 tbsp sugar. Whip the sugar, vanilla and egg yolks until light and fluffy. Add the buttermilk and soured milk and mix carefully. Add lemon juice a bit of the time until you think it's perfect. Eat with fresh strawberries and kammerjunker biscuits.
